Ingredients
- 2 tbsp Salted butter (for the sauce)
- 2 tsp Chili powder (for the sauce)
- Hot sauce (to taste, for the sauce)
- Honey (to taste, for the sauce)
- 1.5 lb Chicken breast (divided into 6 slider-sized pieces)
- 0.5 cup Pickle juice (for marinade)
- 1 cup Buttermilk (for marinade)
- 2 tbsp Hot sauce (for marinade)
- 1 tbsp Chili powder (for marinade)
- 1 tbsp Garlic powder (for marinade)
- 1 tbsp Chicken powder (bouillon powder for marinade)
- 1 tsp Salt (for marinade)
- 2 cup All purpose flour (for flour mixture)
- 0.5 cup Cornstarch (for flour mixture)
- 2 tsp Chili powder (for flour mixture)
- 2 tsp Garlic powder (for flour mixture)
- 2 tsp All spice (for flour mixture)
- Salt (to taste, for flour mixture)
- Vegetable oil (for frying)
- 6 Slider buns (for serving)
Steps
- 1
In a large bowl, combine the chicken breast pieces with pickle juice, buttermilk, hot sauce, 1 tablespoon chili powder, 1 tablespoon garlic powder, 1 tablespoon chicken powder, and 1 teaspoon salt. Mix well to ensure the chicken is fully coated and let it marinate.
- 2
In a separate shallow dish, whisk together the all-purpose flour, cornstarch, 2 teaspoons chili powder, 2 teaspoons garlic powder, 2 teaspoons allspice, and salt to create the dredging mixture.
- 3
Heat frying oil in a deep pan or pot over medium heat until it reaches 345°F (174°C).
- 4
Dredge each piece of marinated chicken in the flour mixture, pressing firmly to ensure a thick, even coating.
- 5
Carefully place the chicken in the hot oil. Fry for about 5 minutes on each side until the chicken is golden brown, crispy, and cooked through to an internal temperature of 165°F.
- 6
While the chicken is frying, prepare the sauce by melting 2 tablespoons of salted butter in a small saucepan. Stir in 2 teaspoons of chili powder, hot sauce, and honey to taste. Keep warm.
- 7
Remove the chicken from the oil and let it cool slightly on a wire rack.
- 8
Spread the hot honey sauce generously over the fried chicken pieces.
- 9
Place the sauced chicken on slider buns and serve immediately.
Notes
Ensure the oil stays at a consistent 345°F for the best crunch. Letting the chicken cool slightly before saucing helps the coating stay crispy.
