Ingredients

  • 0.5 lb pork loin chops (chopped into bite-size pieces)
  • 2 garlic (cloves, minced)
  • salt (to taste)
  • black pepper (to taste)
  • 4 tbsp potato starch (for the batter residue)
  • 1 cup water (for soaking starch)
  • 2 tbsp sugar (for sauce)
  • 0.5 tbsp soy sauce (for sauce)
  • 2 tbsp vinegar (for sauce)
  • 0.5 cup water (for sauce base)
  • bell peppers (chopped; or vegetables of your choice)
  • 2 tbsp cornstarch slurry (to thicken sauce)
  • cooking oil (for frying)

Steps

    Mix 4 tablespoons of potato starch with 1 cup of water in a bowl and set aside to let the starch settle at the bottom (about 15-20 minutes).

    Chop the pork loin chops into bite-size pieces.

    Season the pork with salt, pepper, and 2 cloves of minced garlic.

    Carefully discard all the clear water from the starch bowl, keeping only the thick starch residue at the bottom.

    Scoop the thick starch residue and mix it thoroughly into the seasoned pork until every piece is coated.

    Heat oil in a pan over medium-high heat. Spread out the battered pork into a single flat layer (like a pancake) and flatten it with a spatula.

    Once the bottom is crispy and golden, flip the entire pork pancake over and press it down with the spatula. Repeat until both sides are golden brown and the pork is cooked through.

    While the pork is cooking, prepare the sauce: in a small pot or separate pan, mix 2 tbsp sugar, 2 tbsp vinegar, 1/2 tbsp soy sauce, 1/2 cup water, and chopped bell peppers.

    Bring the sauce mixture to a boil.

    Add the 2 tbsp cornstarch slurry to the boiling sauce and cook, stirring constantly, until the sauce is thick and glossy.

Notes

The 'settled starch' method (using the residue after water is poured off) is a professional technique for achieving a very hard, glass-like crunch. Be careful when flipping the pork pancake so it stays together.
