Caramelized Onion and Bacon Dip

Ingredients
- 250 g Bacon (chopped into small pieces)
- 2 White onion (sliced into julienne)
- 2 tbsp Honey
- 250 g Cream cheese (Philadelphia type)
- 1 tsp Garlic powder
- 0.5 tsp Paprika
- Salt (to taste)
- 2 tbsp Fresh cilantro (finely chopped)
- 2 Green plantain (to make patacones for serving)
- Vegetable oil (for frying the patacones)

Prepare the patacones: Peel the green plantains, cut them into thick chunks, and fry them in hot oil until lightly golden. Remove, flatten, and fry again until crispy. Set aside.

In a skillet over medium heat, brown the chopped bacon until very crispy.

Remove the bacon from the skillet and set aside, keeping the rendered fat in the pan.

In the same bacon fat, add the julienned onion and cook over medium-low heat until it begins to brown.

Stir the honey into the onion and continue cooking until well caramelized. Remove from heat.

In a large bowl, place the cream cheese and season with garlic powder, paprika, and salt to taste.

Add the caramelized onion to the bowl with the cream cheese and stir well until all ingredients are completely combined.

Fold the reserved crispy bacon and chopped cilantro into the mixture.

Serve the dip accompanied by the freshly made patacones.
Notes
You can substitute the patacones with nachos or toasted bread if you prefer. Ensure the cream cheese is at room temperature to make mixing easier.
