Ingredients
Weights are estimates. Together, the ingredients weigh about 505 g before cooking, which is about 65 g per serving.
Steps
Line an approximately 8-inch square baking dish with parchment paper, leaving some overhang on two sides to make the chilled bars easy to lift out. Lightly grease the parchment if desired.
Place the semi-sweet chocolate chips, crunchy sunflower seed butter, and coconut oil in a microwave-safe bowl or the top of a double boiler.
Melt the mixture gently, stirring every 20 to 30 seconds if using a microwave, or stirring constantly over barely simmering water if using a double boiler. Continue until completely smooth; do not overheat the chocolate.
Remove the bowl from the heat and add the chocolate protein powder. Stir thoroughly until the powder is fully incorporated and no dry pockets remain.
Add the puffed quinoa and fold it through the chocolate mixture until the grains are evenly distributed and coated. If substituting crispy rice cereal, fold it in at this stage.
Transfer the mixture to the parchment-lined dish. Press it into an even, compact layer using a spatula or the bottom of a measuring cup; firm pressing helps the bars hold together.
Refrigerate the dish for at least 2 hours, or for several hours, until the mixture is fully firm and sliceable.
Lift the chilled slab out using the parchment overhang and cut it into 8 bars. Keep the bars chilled until serving for the firmest texture.
Notes
The source does not provide exact quantities, pan size, or yield; quantities here are practical estimates for eight bars and should be adjusted according to the protein powder's nutrition label. Store in an airtight container in the refrigerator. The bars are no-bake, dairy-free, and gluten-free when certified dairy-free and gluten-free ingredients are used.
