Ingredients
- 500 g pork chops (trimmed and diced)
- 2 garlic (minced)
- 1 red pepper (diced)
- 1 cup frozen peas
- 3 cup cooked rice (chilled)
- 3 eggs (lightly beaten)
- 0.25 cup sweet chilli sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar (can substitute with lime juice)
- 1 tsp sesame oil (optional)
- spring onions (for topping)
- sesame seeds (for topping)
- fresh coriander (for topping)
- lime (for a squeeze of juice on top)

Whisk together the sweet chilli sauce, soy sauce, rice vinegar (or lime juice), and sesame oil in a small bowl and set aside.

Heat a large frying pan or wok over high heat.

Add the diced pork to the hot pan and cook until golden and caramelised, about 4 to 5 minutes.

Remove the cooked pork from the pan and set it aside.

Add the diced red pepper, frozen peas, and minced garlic to the pan and cook for 2 to 3 minutes.

Push the vegetables to one side of the pan and pour in the lightly beaten eggs.

Scramble the eggs until they are just cooked.

Add the chilled rice, the cooked pork, and the prepared sauce to the pan.

Stir-fry everything together until the ingredients are heated through and evenly coated in the sauce.

Serve immediately, topped with sliced spring onions, sesame seeds, fresh coriander, and a squeeze of lime juice.
Notes
Using chilled rice is essential for fried rice to prevent it from becoming mushy. If you don't have rice vinegar, lime juice works as a great acidic substitute in the sauce.
