Ingredients

  • 0.5 white onion (thinly sliced)
  • 1 tbsp olive oil (for cooking onions)
  • 0.5 cup mayo
  • 2 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce (plus a couple extra dashes for the sauce)
  • 1 tsp cayenne pepper
  • 0.5 lb ground beef (formed into balls)
  • 1 tsp garlic powder
  • salt (to taste)
  • black pepper (to taste)
  • 2 slices cheddar cheese
  • 2 slices American cheese
  • 2 slices sourdough bread
  • 1 tbsp butter (for toasting bread)

    Thinly slice half of a white onion.

    Add the sliced onions to a pan with olive oil and cook over medium heat until they become soft and jammy.

    While the onions cook, prepare the sauce by combining 1/2 cup mayo, 2 tbsp Dijon mustard, 1 tbsp Worcestershire sauce, 1 tsp cayenne pepper, and a pinch of salt and pepper in a small bowl. Mix until smooth.

    Divide the ground beef into balls. Season the beef balls generously with salt, black pepper, and 1 tsp garlic powder.

    Heat a clean pan or griddle over high heat. Place a beef ball in the pan and press it down firmly with a spatula to create a thin patty.

    Cook for a couple of minutes until a crust forms, then flip the patty.

    Immediately top the patty with a slice of cheddar and a slice of American cheese. Cook until the cheese is melted and gooey, then remove from the pan.

    Wipe the pan or use a clean one to melt butter. Place a slice of sourdough bread in the pan.

    Assemble the sandwich by placing the cooked patties onto the bread, followed by a generous portion of the caramelized onions.
