Ingredients

  • 1 white onion (entire onion, diced)
  • 2 carrots (whole, diced)
  • 1 tbsp fresh ginger (minced)
  • 3 green onions (chopped, for garnish)
  • 1.5 lb chicken breasts or thighs (cut into bite-sized pieces)
  • 1 tbsp sesame oil (for marinade)
  • 1 tbsp light soy sauce (for marinade)
  • 4 eggs (large)
  • 0.5 cup teriyaki sauce
  • 1 cup bean sprouts (optional)
  • 0.5 cup frozen peas
  • 4 cup day-old rice (cooked and chilled)
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce

Steps

    Dice an entire white onion and 2 whole carrots. Mince the fresh ginger and chop the green onions. Set aside.

    Cut the chicken breasts or thighs into bite-sized pieces. Place them in a bowl and season with a splash of sesame oil, light soy sauce, and your preferred seasoning blend. Let the chicken marinate if time permits.

    In a large pan or wok, scramble 4 large eggs until just set. Remove from the pan and set aside.

    In the same pan, cook the marinated chicken until fully cooked through. Pour in half a cup of teriyaki sauce and toss to coat the chicken. Remove the chicken from the pan and set aside.

    Wipe the pan if necessary, then add a little oil and sauté the minced ginger first until fragrant. Add the diced onions, carrots, bean sprouts (if using), and frozen peas. Sauté until the vegetables are tender-crisp.

    Add the day-old rice to the pan with the vegetables. Pour in the dark soy sauce and oyster sauce.

    Mix and stir-fry the rice over medium-high heat until the rice is evenly coated and takes on a deep color from the sauces.

    Add the cooked teriyaki chicken and the scrambled eggs back into the pan. Toss everything together until well combined and heated through.

    Garnish with the chopped green onions and serve immediately.

Notes

Using day-old rice is essential for fried rice as it is drier and won't become mushy when stir-fried. The author suggests sautéing the ginger first for the best flavor release.
