A quick, hands-off fried-rice-style meal made entirely in a rice cooker. Rice cooks with mushrooms, carrot, edamame, capsicum, garlic, soy sauce, oyster sauce, sesame oil, and optional bacon or ham, then is finished with spring onions.

Ingredients

  • 1 cup white rice (Rinsed; use uncooked rice)
  • 1 cup mushrooms (Sliced or chopped)
  • 1 carrot (Small carrot, diced)
  • 0.5 cup edamame (Shelled; frozen edamame may be used)
  • 0.5 capsicum (Bell pepper, diced)
  • 100 g bacon or ham (Chopped; optional. Omit for a vegetarian version)
  • 2 cloves garlic (Finely chopped or minced)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (For a vegetarian version, use vegetarian oyster sauce or omit)
  • 1 tbsp sesame oil
  • 1 cup water
  • 2 spring onions (Finely sliced, for finishing)

Steps

    Rinse 1 cup of uncooked rice under cool water until the water runs mostly clear, then drain well. Transfer the rice to the bowl of a rice cooker.

    Add the mushrooms, diced carrot, edamame, capsicum, and chopped bacon or ham to the rice cooker. For a vegetarian version, leave out the bacon or ham.

    Add the minced garlic, soy sauce, oyster sauce, sesame oil, and 1 cup water. Stir gently so the seasonings and ingredients are distributed through the rice without compacting it.

    Secure the rice-cooker lid and select the regular Cook setting. Allow the cooker to run until it switches to Keep Warm and the rice is tender; this will generally take about 20–30 minutes, depending on the cooker.

    Let the cooked rice stand, covered, for about 5 minutes. Open the lid and fluff the rice gently with the rice paddle, mixing the vegetables and meat through evenly. Check that the rice is fully tender and the bacon or ham is hot.

    Finely slice the spring onions and scatter them over the rice. Serve hot directly from the rice cooker.

Notes
