- 4 cup Mixed Vegetables (Such as zucchini, squash, and onions; chopped)
- 2 tbsp Olive Oil (For the veggies and griddle)

- 19 oz Frozen Cheese Tortellini (One standard bag)

- 0.25 cup Italian Dressing (To finish the pasta)

Preheat your griddle to medium-high heat.

In a bowl, toss the chopped vegetables with olive oil, salt, pepper, and garlic powder until well coated.

Place the seasoned vegetables onto the hot griddle and begin cooking, stirring occasionally.

Prepare the chicken by coating the thinly sliced breasts in the Parmesan Garlic sauce.

Dredge the sauced chicken in breadcrumbs until fully coated on both sides.

Place the breaded chicken on a separate section of the griddle. Cook until the breading is golden brown and crispy and the chicken is cooked through (internal temp 165°F).

Once the vegetables are softened, add the bag of frozen tortellini directly to the veggies on the griddle.

Add a squirt of water over the tortellini and immediately cover with a griddle dome or lid to steam for about 5 minutes.

Remove the cover and pour the Italian dressing over the tortellini and vegetable mixture. Toss to combine.

Notes
The author suggests using 'B-Dubs' (Buffalo Wild Wings) brand Parmesan Garlic sauce for the chicken. If you don't have a griddle dome, any large heat-proof lid or even a foil pan flipped upside down will work to steam the tortellini.
