Ingredients
- 1 lb pork belly (Cut into thick pieces)
- salt (For cleaning soak; use a little, to taste)
- 1 tbsp flour (For rubbing and soaking the pork)
- 1 tsp oil (For the cleaning mixture)
- 0.25 cup water (For soaking the pork during cleaning; discard after soaking)
- 1 tbsp sugar (For the marinade)
- 0.5 tsp salt (For the marinade, or to taste)
- 2 tbsp light soy sauce (For the marinade)
- 1 tbsp rice wine (For the marinade)
- 2 tbsp barbecue sauce (For the marinade)
- 1 egg (For the marinade)
- 3 cloves garlic (Finely minced or crushed for the marinade)
- 1 tbsp lard (For the marinade)
- 1 tbsp dark soy sauce (For color and deeper flavor)
- 1 oz fresh ginger (Sliced and placed in the rice cooker)
- 2 green onion (Trimmed and placed in the rice cooker as a bed for the pork)
Steps
- 1
Cut the pork belly into thick, even pieces. Place the pieces in a bowl with a little salt, the flour, oil, and water. Rub the mixture thoroughly over the pork to loosen blood and surface impurities.
- 2
Let the pork soak in the cleaning mixture for about 20 minutes. Drain it thoroughly and discard the soaking liquid.
- 3
Prepare the marinade by combining the sugar, salt, light soy sauce, rice wine, barbecue sauce, egg, garlic, lard, and dark soy sauce in a bowl. Stir until evenly mixed.
- 4
Pour the marinade over the cleaned pork belly. Rub the marinade into every piece so the meat is well coated.
- 5
Cover and marinate the pork for about 30 minutes.
- 6
Arrange the ginger and green onion in the bottom of the rice cooker to form an aromatic bed.
- 7
Place the marinated pork belly on top of the ginger and green onion in an even layer. Pour in any remaining marinade. Do not add water.
- 8
Close the rice cooker and cook for about 40 minutes, or until the pork is tender and fully cooked. For food safety, verify that the thickest piece reaches at least 145°F / 63°C, then allow it to rest briefly.
- 9
Carefully remove the pork and let it cool slightly so it is easier to handle. Slice it thinly and serve with some of the cooking juices if desired.
Notes
The transcript does not provide exact ingredient quantities, so the listed amounts are practical estimates for approximately 1 lb of pork belly. Rice cookers vary; check the pork for tenderness and doneness before serving. The cleaning mixture is discarded and is not part of the finished dish.
