Ingredients

  • 1 cup self-rising flour
  • 1 cup granulated sugar
  • 15 oz canned fruit cocktail with its juice (Use the fruit cocktail together with the juice from the can.)
  • vanilla ice cream (For serving; use a scoop per serving, as desired.)

Steps

  1. 1

Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch or 10.5×7.5-inch baking dish; the latter size was used in the source.

  2. 2

In a medium bowl, add the self-rising flour, granulated sugar, and canned fruit cocktail with all of its juice.

  3. 3

Stir the mixture until just combined. Do not overmix.

  4. 4

Spread the mixture evenly into the prepared baking dish.

  5. 5

Bake until the top is golden and the edges are bubbling. In an 8×8-inch pan, bake for about 40–45 minutes. In a 10.5×7.5-inch pan, bake for about 35–40 minutes because the mixture is spread into a thinner layer; begin checking around 30 minutes.

  6. 6

Allow the cake to cool for 10–15 minutes.

  7. 7

Serve warm with a scoop of vanilla ice cream to help cut the sweetness.

Notes

The source gives two baking-pan options and corresponding baking times. It does not specify the amount or type of fat used to grease the dish.
