Ingredients

  • 2 ripe bananas (large, mashed)
  • 0.5 cup thick vanilla yogurt (vanilla protein yogurt or Greek yogurt)
  • 0.66 cup vanilla protein powder (approx. 2 scoops)
  • chocolate chips (for mixing in)
  • 1 cup chocolate chips (for ganache topping)
  • 1 tbsp creamy salted peanut butter

Steps

  1. 1

Preheat your oven to 325°F (160°C). Grease a small cake tin and set it aside.

  2. 2

In a large mixing bowl, add the mashed bananas, vanilla yogurt, and vanilla protein powder.

  3. 3

Mix the ingredients thoroughly until a smooth batter forms.

  4. 4

Fold in a handful of chocolate chips if desired.

  5. 5

Transfer the batter to the prepared cake tin, smoothing the top.

  6. 6

Bake for 15-20 minutes, or until the top is golden brown. Let the cake cool completely in the pan before adding the topping.

  7. 7

To prepare the optional ganache, add 1 cup of chocolate chips and 1 tablespoon of peanut butter to a microwave-safe bowl.

  8. 8

Microwave in two 30-second increments, stirring well in between, until the texture is rich and smooth.

  9. 9

Pour the ganache over the cooled cake and spread it out in an even layer.

  10. 10

Place the cake in the refrigerator to let the ganache set before slicing and serving.

Notes

Ensure you use a thick yogurt (like Greek or a protein-fortified plant yogurt) to prevent the cake from being too soft. If the cake feels 'goopy' after 20 minutes, it may need a few extra minutes depending on the moisture content of your bananas and the specific brand of protein powder used.
