Chessman Cookie Banana Pudding

Chessman Cookie Banana Pudding

A rich, creamy, and structured banana pudding that uses Chessman butter cookies instead of wafers for a sophisticated twist. This 'solid' version avoids being mushy by using a cream cheese and heavy cream base.

Ingredients

  • 5.1 oz Instant French Vanilla Pudding Mix (one large box)
  • 12 oz Evaporated Milk (chilled)
  • 14 oz Sweetened Condensed Milk (one can)
  • 8 oz Cream Cheese (softened to room temperature)
  • 1 cup Powdered Sugar
  • 1 tsp Vanilla Paste (or vanilla extract)
  • 2 cup Heavy Whipping Cream (chilled)
  • 2 bag Chessman Butter Cookies (Pepperidge Farm brand recommended)
  • 6 Bananas (sliced into rounds)

Steps

  1. 1

In a large mixing bowl, combine the instant French vanilla pudding mix and the chilled evaporated milk.

  2. 2

Blend the pudding and milk mixture for a couple of minutes until it begins to thicken.

  3. 3

Add the sweetened condensed milk to the pudding mixture and blend again until fully incorporated. Place this mixture in the refrigerator to set while you prepare the next component.

  4. 4

In a separate bowl, beat the cream cheese until it is completely smooth and free of lumps.

  5. 5

Add the powdered sugar and vanilla paste (or extract) to the cream cheese and blend until smooth.

  6. 6

Pour in the heavy whipping cream and continue to blend until the mixture reaches a thick, whipped consistency.

  7. 7

Remove the pudding mixture from the refrigerator and add it to the cream cheese mixture. Gently fold the two together until combined.

  8. 8

In a 9x13 inch baking dish, place a single layer of Chessman cookies on the bottom, ensuring full coverage.

  9. 9

Place an even layer of banana slices over the cookies.

  10. 10

Spread half of the pudding and cream cheese mixture evenly over the banana layer.

  11. 11

Add another layer of banana slices on top of the pudding mixture.

  12. 12

Spread the remaining half of the pudding mixture evenly over the second layer of bananas.

  13. 13

Finish with a final layer of Chessman cookies on top.

  14. 14

Cover the dish and refrigerate for at least 4 hours before serving to allow the cookies to soften slightly and the flavors to meld.

Notes

For the best results, ensure the evaporated milk and heavy cream are very cold. The recipe is noted for being 'solid' rather than 'mushy', making it easy to scoop and serve. This is a variation of the famous Paula Deen 'Not Yo' Mama's Banana Pudding'.
