Ingredients

  • 3 Persian cucumbers (finely diced)
  • 2 tomatoes (finely diced)
  • 0.5 red onion (finely chopped)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lime juice (or lemon juice; freshly squeezed)
  • salt (to taste)
  • black pepper (to taste)
  • 1 tsp dried mint (generous sprinkle)

Steps

  1. 1

Chop the Persian cucumbers into a small, uniform dice and add them to a large mixing bowl.

  2. 2

Chop the tomatoes into a small dice, similar in size to the cucumbers, and add them to the bowl.

  3. 3

Finely chop the onion and add it to the bowl with the other vegetables.

  4. 4

Season the salad by drizzling with extra virgin olive oil and adding the freshly squeezed lime or lemon juice.

  5. 5

Add the salt, black pepper, and a generous sprinkle of dried mint.

  6. 6

Toss the salad thoroughly until all ingredients are well combined and evenly coated with the dressing.

Notes

For the most authentic Shirazi salad, ensure the vegetables are diced very small and uniformly. This salad is best served fresh but can sit for 15-30 minutes to allow flavors to meld.
