Ingredients

  • 4 kg Beef or Mutton (Cut into bite-sized cubes)
  • 4 tbsp Ginger garlic paste
  • 2.5 packet Shan Tikka Boti masala (Use up to 3 packets for more spice)
  • 4.5 tbsp Raw papaya paste (Acts as a meat tenderizer; alternatively use 3 tbsp commercial meat tenderizer)
  • 1 tbsp Chilli flakes
  • 1 packet Heavy cream (Olpers cream or similar full-fat cream)
  • 1 tbsp Chaat masala
  • 0.75 cup Fried onions (Crushed)
  • 150 g Butter (Melted for basting or mixing)

Steps

    Prepare the meat by cutting the beef or mutton into uniform bite-sized cubes. Ensure the meat is washed and patted thoroughly dry to allow the marinade to stick.

    In a large mixing bowl, combine the meat with 4 tablespoons of ginger garlic paste and 4-5 tablespoons of raw papaya paste. The papaya is essential for breaking down the tough fibers in the beef.

    Add 2.5 to 3 packets of Shan Tikka Boti masala, 1 tablespoon of chili flakes, and 1 tablespoon of chaat masala. Mix thoroughly to coat every piece of meat.

    Incorporate 1 packet of Olpers cream and 3/4 cup of crushed fried onions. The cream ensures the tikka remains juicy and soft after cooking.

    Add the melted butter (150g) to the mixture and give it a final thorough mix.

    Cover the bowl and allow the meat to marinate for at least 4 hours, or ideally overnight in the refrigerator, to ensure the tenderizer works effectively.

    Thread the marinated meat onto skewers.

    Grill over hot coals (charcoal) or in a preheated oven until the meat is charred on the outside and tender throughout. If grilling, turn the skewers frequently and baste with any remaining marinade or extra butter if desired.

Notes

For the softest results, do not skip the raw papaya paste. If using a commercial meat tenderizer powder instead, follow the package instructions for 4kg of meat (usually about 3 tbsp). Serve with mint chutney and naan.
