Ingredients
- 3 tbsp 0.2% Greek yogurt (For the dressing)
- 1 tsp Whole-grain mustard (For the dressing)
- 1 tsp Honey (For the dressing)
- Pepper (A pinch, for the dressing)
- Salt (A pinch, for the dressing)
- 200 g Bow-tie pasta (Weighed uncooked)
- 150 g Grilled chicken strips (Ready to use)
- 4 Bacon (Cooked and finely chopped; approximately 60 g total)
- 0.5 Red onion (Thinly sliced; approximately 55 g)
- 0.25 Cucumber (Cut into thin half-moons; approximately 75 g)
- 10 Cherry tomatoes (Cut into pieces; approximately 170 g)
- 2 Jarred grilled red bell pepper (Diced; drained weight estimated at approximately 180 g)
- 2 handjes Baby spinach (Approximately 60 g)
- Parmesan shavings (Optional, to taste; a small amount estimated at 20 g)
Steps
- 1
Bring a large pot of salted water to a boil. Cook the bow-tie pasta according to the package instructions until al dente. Drain the pasta, rinse it under cold water, and allow it to drain and cool thoroughly.
- 2
Meanwhile, combine the Greek yogurt, whole-grain mustard, and honey in a small bowl until smooth. Season with a pinch of pepper and salt.
- 3
Place the sliced red onion, cucumber, cherry tomatoes, grilled bell pepper, and baby spinach in a large bowl.
- 4
Fold the cooled, well-drained pasta into the vegetables until everything is evenly distributed.
- 5
Add the grilled chicken strips and cooked, finely chopped bacon. Mix gently so the vegetables and pasta remain intact.
- 6
Pour the honey-mustard dressing over the salad and mix thoroughly until the dressing is evenly distributed.
- 7
Finish with Parmesan shavings, if desired.
- 8
Cover the bowl and refrigerate the salad for at least 30 minutes so the flavors can meld and the salad becomes thoroughly chilled.
- 9
If desired, divide the salad immediately among four containers for meal prep. Keep the portions refrigerated until ready to eat.
