Chicken Bites with Avocado Spread
Chicken bites marinated in Greek yogurt, coated in a crunchy mixture of Parmesan, almond, and sesame, and cooked in an air fryer or oven. Served with a creamy avocado, egg, cilantro, and olive oil spread.

Ingredients
- 400 g Chicken (Preferably tenderloins, cut into cubes)
- 200 g Greek yogurt
- Spices (To taste; the author uses garlic, onion, paprika, and turmeric. The video also mentions salt and pepper)
- 0.25 cup Parmesan cheese (For the coating)
- 0.25 cup Ground almonds (For the coating)
- 1 tbsp Sesame seeds (For the coating)
- Cooking oil (A drizzle for the air fryer; amount unspecified)

- 0.5 Avocado (Half a small avocado)
- 1 manojo Fresh cilantro (For the spread)

Cut the chicken into evenly sized cubes so that it cooks evenly.

In a bowl, mix the Greek yogurt with spices to taste: garlic, onion, paprika, and turmeric. Also add salt and pepper, as indicated in the video.

Add the chicken cubes to the yogurt mixture and stir until they are completely coated.

Cover the bowl and refrigerate the chicken for at least 30 minutes to marinate.

While the chicken marinates, prepare the eggs pan-fried. Let them cool slightly before blending.

In a bowl, mix the Parmesan, ground almonds, and sesame seeds until evenly combined.

Coat each marinated chicken cube in the Parmesan, almond, and sesame mixture, making sure it is covered on all sides.

Drizzle the air fryer basket with a little oil and arrange the chicken cubes in a single layer without overcrowding them.

Cook in the air fryer at 180 °C for 12 minutes. Turn them halfway through cooking so they brown on both sides, and check that the chicken is fully cooked in the center.

Alternatively, preheat the oven to 200 °C and cook the chicken cubes for approximately 15 minutes, or until golden and fully cooked.

Place the pan-fried eggs, half the small avocado, cilantro, and olive oil in a blender or food processor.

Blend until smooth and creamy.

Serve the hot chicken bites with the avocado spread.
Notes
The recipe makes two servings and is keto-friendly and gluten-free, provided that all products used are certified gluten-free. Do not overcrowd the air fryer basket to encourage browning.
