A refreshing and healthy mango sorbet that is much better than store-bought. It only requires three basic ingredients and has a significantly lower sugar content.

Ingredients

  • 5 cup mango (fresh or frozen; approximately 5 mangos if using fresh fruit)
  • 0.25 cup lime juice (freshly squeezed; you can use up to 1/3 cup depending on your preference)
  • 0.25 cup honey (or agave or another sweetener of your choice; optional if the mango is very sweet)
  • vodka or tequila (a small splash (optional) to prevent it from freezing solid)

    If using fresh mangos and you wish to serve them in their skins, cut the mangos in half and use a spoon to carefully scoop out the fruit, reserving the shell halves.

    If using fresh mango, place the fruit pieces on a baking sheet lined with parchment paper and freeze until solid, approximately 2 hours.

    Place the frozen mango, lime juice, and honey (or chosen sweetener) in a food processor or high-power blender.

    If you want the sorbet to be easier to scoop directly from the freezer, add a small splash of vodka or tequila at this point.

    Blend until the mixture is completely smooth. This may take a minute or two since the mango is frozen.

    Stop the motor occasionally to scrape down the sides of the bowl with a spatula and ensure everything is well combined.

    Serve immediately if you prefer a soft-serve consistency.

    For a firmer texture, place the sorbet into the reserved mango halves or a container and return it to the freezer until firm, about 2 to 3 hours.

Notes

You can adjust the amount of lime juice and sweetener to your personal taste. If the mango is perfectly ripe, you might not need honey at all. You can also experiment by adding other fruits like strawberries, pineapple, or passion fruit.
