Ingredients
- 0.25 cup black sesame seeds (toasted and ground into a paste)
- 4 egg yolks (large)
- 3 tbsp sugar (added to egg yolks)
- 1.5 cup heavy cream (estimated for standard custard base)
- 0.5 cup whole milk (estimated for standard custard base)
Steps
- 1
Place 1/4 cup of black sesame seeds in a pan over medium heat and toast them until you can smell the aroma and they start to pop.
- 2
Grind the toasted seeds until they form a thick, smooth paste.
- 3
In a separate bowl, combine 4 egg yolks and 3 spoons of sugar. Mix them together thoroughly and set aside.
- 4
In a saucepan, heat the cream and milk (if using) until simmering, then slowly temper the egg mixture by whisking in a small amount of the hot liquid.
- 5
Combine everything back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- 6
Whisk the black sesame paste into the custard base until fully incorporated.
- 7
Chill the mixture completely in the refrigerator before churning in an ice cream maker according to the manufacturer's instructions.
Notes
The creator mentions this can be served as a 'soft serve version' if eaten immediately after churning, or frozen longer for a firmer texture. Black sesame is noted for being rich in Omega-3s.
