Taiwanese Egg Crepe (Dan Bing)

Ingredients
- 0.33 cup all purpose flour
- 2 tbsp tapioca starch
- 0.67 cup water
- 0.5 tsp salt (for batter)
- 0.5 tsp sesame oil
- 1 bunch green onion (chopped)
- 1 egg (for batter)
- 2 eggs (for egg layer)
- salt (pinch, for egg layer)
- 2 sliced ham (1-2 pieces)
- cheddar cheese (handful)
- 2 tbsp corn (optional)
- vegetable oil (for drizzling in pan)
- Kewpie mayo (optional sauce for drizzling)
- Thai chili sauce (optional sauce for drizzling)
- Soy sauce with chili oil (optional sauce for drizzling)

In a bowl, mix the all purpose flour, tapioca starch, water, 1/2 tsp salt, and sesame oil until the mixture reaches a runny consistency.

Add 1 egg to the batter and mix in the chopped green onions.

In a separate bowl, whisk the remaining 2 eggs with a pinch of salt and set aside.

Place a small omelette pan over medium heat and drizzle in a little bit of oil.

Once the pan is hot, pour in half of the pancake batter mixture. Tilt the pan to cover the bottom in a thin, even layer.

Let the batter sit for around 2-3 minutes until set, then flip and cook for another 1-2 minutes. Remove the pancake from the pan and set aside.

Drizzle a little more oil into the pan and pour in half of the beaten egg mixture (1 egg's worth), spreading it out into a thin layer.

Immediately place the cooked pancake back on top of the wet egg layer. Let it sit for about 30 seconds, or until the egg has adhered to the pancake, then flip the whole thing over.

Add the cheese, ham, and corn (if using) on top of the pancake and cook for another 1 minute until the cheese begins to melt.

Roll up the pancake by folding each side towards the middle and remove from the pan. Repeat the process for the second crepe.

Drizzle with Kewpie mayo, Thai chili sauce, or soy sauce with chili oil as desired.
Notes
The recipe makes two crepes. The tapioca starch is key for the signature chewy texture of authentic Dan Bing. You can customize the fillings with other ingredients like pork floss or bacon.
