Banana Flan or Quesillo (Water Bath)
A creamy, sweet homemade flan made with very ripe bananas, sweetened condensed milk, whole milk, and eggs. It is gently cooked in a water bath over golden caramel for a smooth and aromatic dessert.

Ingredients
- 2 Very ripe bananas (Peeled; approximately 200 g of pulp)
- 2 Eggs
- 1 cup Whole milk (Approximately 240 ml)
- 1 lata Sweetened condensed milk (Standard can, approximately 397 g)
- Vanilla extract (A splash, to taste)
- 1 cup White sugar (To prepare the caramel)
- Water (As needed for the water bath)

Peel the bananas and cut them into pieces. Place them in a blender along with the eggs, whole milk, condensed milk, and vanilla extract.

Blend for a few minutes until the mixture is completely uniform with no visible banana pieces. Set the mixture aside while you prepare the caramel.

Place 1 cup of sugar directly into a flan-safe mold. Heat it on the stove over medium heat, stirring carefully, until the sugar melts and reaches a golden amber color.

Tilt and rotate the mold very carefully to spread the caramel over the bottom and sides. Avoid touching the caramel, as it will be extremely hot.

Let the mold rest for a few minutes until the caramel cools and hardens slightly.

Pour the banana mixture over the cooled caramel. Cover the mold tightly with aluminum foil to prevent water or steam from entering the flan.

Place the covered mold inside a wide pot. Add hot water around the mold until it reaches approximately halfway up its sides, creating a water bath (bain-marie).

Cover the pot and cook over medium-low heat for 40 to 60 minutes. The flan is ready when the edges appear firm and the center jiggles slightly when the mold is moved; a toothpick inserted in the center should come out almost clean.

Remove the mold from the water bath and let the flan cool. To unmold, run a thin knife around the edges, place a plate on top, and carefully flip the mold so the caramel covers the flan.
Notes
Cooking time may vary between 40 and 60 minutes depending on the size of the mold and the heat intensity. Handle the caramel with extreme care because it can cause severe burns. For cleaner slices, chill the flan completely before unmolding; the video does not specify a cooling time.
