Ingredients
- 1.5 lb baby potatoes (Washed, dried, and sliced in half)
- 2 tbsp extra virgin olive oil (Or avocado oil)
- 1 tbsp garlic powder
- 3 tsp dried rosemary (Alternatively, use fresh rosemary)
- 1 tsp salt
- 0.5 tsp paprika
- 0.125 tsp black pepper
- oil (For lightly spraying the air fryer basket)
- fresh herbs (Optional, for tossing with the cooked potatoes)
Steps
- 1
Wash and dry the baby potatoes, then slice them in half.
- 2
Place the halved potatoes in a mixing bowl and rub them with the olive oil until coated.
- 3
Add the garlic powder, dried rosemary, paprika, salt, and black pepper. Mix until the potatoes are evenly coated with the seasonings.
- 4
Lightly spray the air fryer basket with oil and place the potatoes inside.
- 5
Set the air fryer to 400°F (204°C) and cook for 15–20 minutes. Shake the basket or toss the potatoes halfway through cooking.
- 6
Check doneness by piercing a potato with a fork. If it needs more time, continue cooking in 2-minute increments until tender inside with crisp, golden-brown skins.
- 7
Remove the potatoes from the basket. If desired, toss with fresh herbs, then serve with your favorite main dish.
Notes
The site gives two different leftover-storage recommendations: 3–5 days in the body text and up to 7 days in the recipe notes, so storage duration is unclear.
