Ingredients

  • 15 g olive oil (approx. 1 tbsp)
  • 10 garlic cloves (grated)
  • 170 g tomato paste (1 small can)
  • 448 g 93% lean ground beef (16 oz)
  • 1 tsp coarse salt (for the ragu base)
  • 1 tsp black pepper
  • 1 tsp red chili flakes
  • 1 tsp Italian seasoning
  • 425 g canned cannellini beans in vodka sauce (or substitute with 1 can plain cannellini beans + 1 cup store-bought vodka sauce + 1 tbsp olive oil)
  • 425 g canned lentils (drained)
  • 336 g whole wheat pasta (12 oz)
  • 2 tsp coarse salt (for cooking liquid)
  • 450 ml bone broth (16 oz)
  • 336 ml water (12 oz)
  • 120 g whole milk skyr or Greek yogurt (1/2 cup)
  • 30 g parmigiano reggiano (grated)
  • fresh herbs (chopped cilantro, basil, or parsley for garnish)

Steps

    Heat the olive oil in a large pot or deep skillet over medium-high heat. Add the grated garlic and tomato paste, sautéing until the tomato paste darkens slightly and the garlic is fragrant.

    Add the ground beef to the pot. Season with 1 tsp salt, black pepper, red chili flakes, and Italian seasoning. Cook, breaking up the meat with a spoon, until browned.

    Stir in the cannellini beans (in vodka sauce) and the canned lentils. Mix well to combine.

    Add the dry pasta, bone broth, water, and 2 tsp of salt. Stir to ensure the pasta is submerged.

    Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for the time indicated on the pasta package, stirring occasionally to prevent sticking, until the pasta is al dente and the liquid has reduced to a thick sauce.

    Remove from heat. Stir in the Greek yogurt (or skyr) and Parmigiano Reggiano until creamy and well incorporated.

    Serve hot, garnished with fresh chopped cilantro, basil, or parsley.

Notes

This recipe is excellent for meal prep and freezes well. If you cannot find canned beans in vodka sauce, use a standard can of cannellini beans and add 1 cup of store-bought vodka sauce plus an extra tablespoon of olive oil to the pot.
