Ingredients

  • 2 garlic cloves (medium, finely chopped)
  • 4 anchovy fillets (medium, finely chopped)
  • 0.25 cup extra-virgin olive oil
  • 0.25 cup olive oil
  • 1 tbsp lemon juice (fresh, from 1 medium lemon)
  • 0.5 tsp flaky sea salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh chives (chopped)
  • 1 tbsp fresh flat-leaf parsley (chopped)
  • 1 tsp lemon zest (grated)
  • 2 oz Parmigiano-Reggiano cheese (grated, about 1/2 cup)
  • 1 lb crusty bread (loaf, warmed)

Steps

    Smash garlic on a cutting board with the flat side of a chef’s knife, and finely chop.

    Finely chop anchovy fillets and mash into garlic until a paste forms.

    Pour both extra-virgin olive oil and olive oil onto a large shallow platter or rimmed plate.

    Stir the garlic-anchovy paste, lemon juice, salt, and pepper into the oil.

    In a small bowl, stir together the chives, parsley, lemon zest, and Parmigiano-Reggiano.

    Sprinkle the herb and cheese mixture evenly over the oil mixture.
