Ingredients

  • 2 sub rolls (Sliced lengthwise)
  • 2 tbsp butter (Softened)
  • 2 cloves garlic (Minced)
  • 1 tsp parsley (Dried)
  • 2 chicken breasts (Cooked and sliced)
  • 2 cups romaine lettuce (Chopped)
  • 0.333 cup Caesar dressing
  • 0.25 cup Parmesan cheese (Grated)

Steps

  1. 1

Soften the butter if needed. Mince the garlic and measure the dried parsley. Slice the sub rolls lengthwise, keeping the halves connected if desired.

  2. 2

In a small bowl, mix the softened butter, minced garlic, and parsley until evenly combined and fragrant.

  3. 3

Spread the garlic-butter mixture generously over the cut sides of both sub rolls, covering the bread as evenly as possible.

  4. 4

Place the buttered rolls cut-side up under a broiler. Toast for a few minutes, watching closely, until the bread is golden and crisp around the edges. Do not leave it unattended, as garlic bread can burn quickly.

  5. 5

While the bread is toasting, place the chopped romaine in a bowl. Add the Caesar dressing and grated Parmesan, then toss gently until the lettuce is evenly coated while remaining crisp.

  6. 6

Remove the toasted bread from the broiler. Layer the sliced cooked chicken onto the bottom halves of the rolls.

  7. 7

Pile the dressed romaine salad over the chicken. Close each sub and press lightly to hold the filling together.

  8. 8

Serve the subs immediately while the garlic bread is warm and crisp.

Notes

These subs are best eaten immediately after assembly. To prepare ahead, store the toasted bread, chicken, and Caesar salad separately and assemble just before serving so the bread stays crisp. Use fresh bread, add dressing shortly before serving, and warm the chicken slightly for better flavor. Soft sub rolls or hoagie buns work well. Suggested accompaniments include fries, light soup, or fruit salad.
