- 6 oz Spam (Cut into small cubes)
- 0.5 yellow onion (Diced)
- 2 green onion (Sliced; use most for cooking and reserve some for finishing)
- 2 cloves garlic (Minced)

Prepare all ingredients before cooking: cube the Spam, dice the onion, slice the green onions, mince the garlic, beat the eggs, and have the chilled day-old rice ready. Break up any large clumps in the rice with your fingers or a spoon.

Add the cubed Spam in a single layer. Fry, stirring occasionally, until the pieces are browned and crisp on several sides, about 3โ4 minutes.
