Ingredients
- 1.5 cup all-purpose flour (for cake batter)
- 3 eggs
- 1 cup unsalted butter (softened, for cake batter)
- 0.75 cup granulated sugar (for cake batter)
- 1 tbsp vanilla extract
- salt (a pinch)
- 1 tsp baking powder
- 0.25 cup milk
- 0.5 cup blueberries (for filling)
- 1 tbsp granulated sugar (for blueberry filling)
- 0.66 cup all-purpose flour (for crumble topping)
- 0.5 cup brown sugar (for crumble topping)
- 3 tbsp butter (for crumble topping)
- 1 tsp cinnamon (for crumble topping)
Steps
- 1
Preheat your oven to 350°F (175°C).
- 2
In a medium bowl, prepare the cake batter by creaming together the softened butter and granulated sugar. Add the eggs, vanilla extract, and milk, mixing until combined. Fold in the flour, baking powder, and salt until a smooth batter forms.
- 3
In a small bowl, toss the blueberries with 1 tablespoon of granulated sugar to create the filling.
- 4
In another bowl, prepare the crumble topping by mixing the flour, brown sugar, cinnamon, and 3 tablespoons of butter until the mixture is crumbly.
- 5
Pour the cake batter into a greased baking pan. Distribute the blueberry filling evenly over the top of the batter, then sprinkle the crumble topping over the blueberries.
- 6
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Notes
Ensure your butter is properly softened to room temperature for the best texture in the batter. Store leftovers in an airtight container at room temperature for up to 2 days.
