Ingredients

  • 200 g fettucine (or any pasta of choice)
  • water (for boiling)
  • 150 g chicken breast (diced)
  • salt (to taste)
  • pepper (to taste)
  • paprika (a dash)
  • garlic powder (a dash)
  • 3.5 tbsp olive oil (3-4 tbsp)
  • 4 garlic (minced)
  • 1 cup pesto
  • 1 cup cherry tomatoes (sliced)
  • Parmesan cheese (for garnish)

Steps

    Bring a large pot of salted water to a boil. Add the 200 grams of fettucine and cook according to package instructions until al dente.

    Season the 150 grams of diced chicken breast with salt, pepper, a dash of paprika, and a dash of garlic powder.

    Heat 3-4 tablespoons of olive oil in a large skillet over medium-high heat.

    Add the seasoned chicken to the skillet and sauté until cooked through and slightly browned.

    Add the 4 cloves of minced garlic to the skillet and sauté for about 1 minute until fragrant.

    Stir in 1 cup of pesto and 1 cup of sliced cherry tomatoes. Cook for 2-3 minutes until the tomatoes begin to soften.

    Add the cooked pasta to the skillet and toss thoroughly to coat the noodles in the pesto sauce.

    Serve immediately, garnished with Parmesan cheese.

Notes

You can use any pasta shape you prefer. If the sauce is too thick, add a splash of the pasta cooking water to loosen it.
