Butcher's Coca-Cola Braised Pork Knuckle Ham

Ingredients
- 2 pork ham hock (pork knuckles)
- 2 L Coca-Cola
- 3 L water
- 2 onion (whole)
- 2 carrot (whole)
- 5 g black peppercorns
- 3 g bay leaves
- 20 g garlic (for the boil)
- 25 g salt (for the boil)
- 70 g butter
- 25 g garlic (to be fried in butter)
- 100 g pickled cucumbers (thinly sliced)
- 10 g parsley (finely chopped)
- 10 g garlic (finely chopped, fresh)
- 2 g black pepper (for meat mixture)
- 2 g salt (for meat mixture)
- 100 g mayonnaise
- 20 g mustard
- 1 red onion (finely chopped)
- 2 g onion powder
- 2 g garlic powder
- 2 g sweet paprika
- 2 g black pepper (for sauce)
- 2 g salt (for sauce)
- 8 g sugar
- 10 ml apple vinegar

Tie the pork knuckles with wooden spoons (to keep them together) and place them in a large cauldron or heavy-bottomed pot.

Pour 2 liters of Coca-Cola and 3 liters of water into the cauldron until the knuckles are submerged.

Bring to a boil and cook for 1 hour.

Add the whole onions, carrots, black peppercorns, bay leaves, 20g of garlic, and 25g of salt to the pot.

Continue boiling for another 2 hours until the meat is very tender and falling off the bone.

Remove the boiled meat from the pot and discard the bones.

In a separate pan, melt 70g of butter and fry 25g of garlic cloves until fragrant. Drain the butter and pour it over the shredded meat.

Add the thinly sliced pickled cucumbers, finely chopped parsley, 10g of finely chopped fresh garlic, 2g of black pepper, and 2g of salt to the meat. Mix well.

Fill a large plastic container with the meat mixture, pressing it down firmly. Cover with aluminum foil and refrigerate for 5 hours to set.

In a small bowl, prepare the sauce by combining mayonnaise, mustard, finely chopped red onion, sugar, apple vinegar, onion powder, garlic powder, sweet paprika, 2g of black pepper, and 2g of salt.

Whisk the sauce until smooth and serve alongside the chilled, sliced homemade ham.
Notes
The wooden spoons are used as splints to keep the shape of the knuckle during the long boiling process. Ensure the meat is pressed tightly in the container to ensure it slices cleanly after chilling.
