Chicken and Cheese Quesadillas

Ingredients
- 1 lb chicken breast (boneless, skinless, cut into small bite-sized pieces)
- 1 packet taco seasoning (or 2-3 tbsp of homemade taco seasoning)
- 1 tbsp olive oil (for sautéing the chicken)
- 8 flour tortillas (medium size)
- 2 cup shredded Mexican cheese blend (or cheddar/monterey jack)
- 2 tbsp butter (for greasing the pan)

Cut the chicken breast into small, even bite-sized pieces. Place them in a bowl and toss with the taco seasoning until thoroughly coated.

Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until the chicken is cooked through and slightly browned, about 6-8 minutes. Remove chicken from the skillet and set aside.

Wipe out the skillet or use a clean one. Melt a small amount of butter over medium heat.

Place one tortilla in the skillet. Sprinkle a generous layer of shredded cheese over the entire surface of the tortilla.

Distribute a portion of the cooked chicken over one half of the tortilla.

Once the cheese begins to melt, fold the tortilla in half over the chicken to create a half-moon shape.

Cook for 1-2 minutes per side, pressing down slightly with a spatula, until the tortilla is golden brown and crispy and the cheese is fully melted.

Repeat the process with the remaining tortillas, chicken, and cheese.

Remove from heat, let rest for one minute, then slice into wedges and serve warm.
Notes
Serve with sour cream, salsa, or guacamole for dipping. You can add sautéed peppers and onions to the filling for extra flavor and nutrition.
