Ingredients
- 4 Yellow or green lemons (Halved; remove the seeds. The original recipe does not provide quantities, so this amount is estimated.)
- 4 Serrano chiles (Adjust to taste; some can be partially substituted with jalapeños.)
- 2 Garlic cloves (Peeled.)
- 0.25 cup White onion (Chopped into large pieces.)
- 3 tbsp Vegetable oil (For frying the lemons and aromatics.)
- Salt (To taste; amount estimated for seasoning the salsa.)
Steps
- 1
Wash and dry the lemons. Cut them in half and remove the seeds to prevent excessive bitterness.
- 2
Heat the oil in a skillet over medium heat. Place the lemons cut-side down and fry them until the flesh and peel are well browned and slightly charred, approximately 3 to 4 minutes per side.
- 3
Add the serrano chiles, garlic, and onion to the same skillet. Fry for 2 to 3 minutes, stirring frequently, until lightly browned and fragrant.
- 4
Transfer the fried lemons, chiles, garlic, onion, and remaining oil to a blender. Blend until the salsa reaches the desired texture; it can be completely smooth or slightly rustic.
- 5
Season with salt to taste and blend briefly again to combine. Taste and adjust the heat or salt before serving.
- 6
Serve the salsa warm or at room temperature as an accompaniment to tacos, meats, fish, or Mexican snacks.
Notes
The visible publication only provides the name of the salsa and does not include quantities or instructions. The ingredients, quantities, and method above are an estimated culinary reconstruction; fried lemon can add bitter notes if it is burned too much.
