- 2 tbsp Sesame seeds (Plus additional to taste; optional)
- 1 Large green bell pepper (Diced; approximately 164 g edible portion)
- 2 cloves Garlic (Grated)
- 1 Small red bell pepper (Diced; approximately 119 g edible portion)
- 0.5 bunch Cilantro (Minced; approximately 15 g)
- 0.5 lemon Lemon juice (Juice of half a lemon; approximately 15 g juice)
- 0.5 bunch Scallions (Use green tops only; minced. Approximately 25 g)
- Chili flakes (Optional, to taste)

Thaw the fully cooked edamame according to the package directions, then drain it well. Drain and rinse the canned chickpeas.

Dice the cucumbers, green bell pepper, and red bell pepper into bite-size pieces. Mince the cilantro and the green tops of the scallions. Grate the ginger and garlic.

Add the light soy sauce, sesame oil, honey, grated ginger, grated garlic, lemon juice, minced scallion greens, and minced cilantro to a small bowl. Stir until the honey is fully incorporated and the dressing is evenly combined.

Place the chickpeas, thawed edamame, diced cucumbers, green bell pepper, and red bell pepper in a large mixing bowl.

Pour the scallion-ginger dressing over the chickpea, edamame, and vegetable mixture. Toss thoroughly so the dressing coats all of the ingredients.
