Ingredients

  • 1 cup Water (divided in half)
  • 3 tbsp Grass-fed gelatin
  • 0.5 cup Raw honey or manuka honey (Choose raw honey or manuka honey)
  • 1 tbsp Vanilla bean paste
  • Arrowroot powder or corn flour (Optional, for dusting before refrigerated storage)

Steps

  1. 1

Pour 1/2 cup of the water into the bowl of a stand mixer. Sprinkle the gelatin over the water and let it bloom for 5–10 minutes.

  2. 2

Put the remaining 1/2 cup water and the vanilla bean paste in a pot. Heat gently; do not let it boil.

  3. 3

Take the pot off the heat. Stir the hot vanilla water into the bloomed gelatin and mix until the gelatin has melted.

  4. 4

    Stir in the honey.

  5. 5

Attach the whisk to the stand mixer and beat the mixture on medium speed for about 5 minutes, until fluffy but still pourable.

  6. 6

Pour the mixture into a parchment-lined baking tray. Chill for at least 4 hours, then cut into cubes.

  7. 7

Store the marshmallow cubes in the refrigerator. If desired, dust with a little arrowroot powder or corn flour before storing.

  8. 8

Enjoy as a sweet treat or add to warm drinks such as hot chocolate or coffee.
