Ingredients

  • 2 chicken breasts
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tbsp onion powder
  • 2 tsp garlic powder
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 2 tsp minced garlic
  • 1 tsp ginger powder
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 2 cup cooked broccoli
  • 1 cup cooked white rice
  • 0.5 avocado
  • sesame seeds (optional garnish)
  • green onions (optional garnish)

Steps

  1. 1

Season the chicken breasts evenly on both sides with 2 tsp salt, 1 tsp pepper, 1 tbsp onion powder, and 2 tsp garlic powder.

  2. 2

Place the seasoned chicken in the air fryer and cook at 385°F (195°C) for 13-15 minutes, flipping the breasts halfway through the cooking time.

  3. 3

In a small bowl, whisk together the 3 tbsp honey, 2 tbsp soy sauce, 2 tsp minced garlic, 1 tsp ginger powder, 1 tsp rice vinegar, and 1 tsp sesame oil to create the teriyaki sauce.

  4. 4

Optional: For a thicker glaze, pour the mixed teriyaki sauce into a small nonstick saucepan and simmer over medium-low heat for 2-3 minutes until slightly reduced.

  5. 5

Once the initial air frying is complete, brush the chicken breasts generously with the teriyaki sauce.

  6. 6

Return the glazed chicken to the air fryer and cook at 400°F (205°C) for an additional 2-4 minutes until the sauce is bubbly and caramelized.

  7. 7

Assemble 2 bowls by dividing the cooked white rice and cooked broccoli evenly between them.

  8. 8

Slice the teriyaki chicken and place it over the rice and broccoli, then top each bowl with slices of avocado.

  9. 9

Optional: Garnish with sesame seeds and sliced green onions before serving.

Notes

To thicken the sauce more effectively, you can add a small cornstarch slurry (1/2 tsp cornstarch mixed with 1/2 tsp water) while simmering. For meal prep, store the avocado separately to prevent browning.
