Ingredients

  • 400 g shrimp (medium and pre-cooked)
  • 0.5 red bell pepper (chopped)
  • 2 avocados (ripe, chopped)
  • 0.5 red onion (chopped)
  • 1 puñado fresh cilantro (finely chopped)
  • 6 limes (juiced)
  • 2 tbsp tomato sauce (ketchup-style or base sauce)
  • 2 tbsp olive oil
  • salt (to taste)

Steps

    Place the 400g of medium cooked shrimp in a large bowl.

    Finely chop the half red onion and the half red bell pepper.

  3. 3

    Cut the 2 ripe avocados into cubes.

  4. 4

    To prepare the dressing, halve and squeeze the 6 limes into a separate container.

    Add the 2 tbsp of tomato sauce, the 2 tbsp of olive oil, and salt to taste to the lime juice. Mix well.

    Finely chop a generous handful of fresh cilantro.

    Incorporate the onion, bell pepper, avocado, and cilantro into the bowl with the shrimp.

    Pour the dressing over the ingredients and stir gently so as not to mash the avocado.

    Let the mixture rest for a few minutes to allow the flavors to blend before serving.

Notes

It is important that the avocados are ripe but firm so they maintain their shape when mixing. Letting the ceviche rest is key for the lime acid to penetrate the ingredients.
