Ingredients

  • 1 lb ground beef
  • 2.5 yellow potatoes (Medium potatoes, cut into ½-inch cubes)
  • 0.75 yellow onion (Diced; source gives ½–1 onion)
  • 1 cup cooked brown rice
  • 0.5 cup beef broth (Plus more as needed)
  • 1 tbsp bottled or minced garlic
  • 1 tbsp Worcestershire sauce
  • 0.75 tsp Italian seasoning (Source gives ½–1 tsp)
  • 0.75 tsp paprika (Source gives ½–1 tsp)
  • 0.5 tsp chili powder
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • salt (To taste)
  • black pepper (Generous amount, to taste)
  • shredded cheddar cheese (Optional; estimated ½ cup if used)
  • hot sauce (Optional, to taste; estimated 1 tbsp if used)

Steps

    Heat a large skillet over medium-high heat. Add the ground beef and break it into small pieces with a spatula.

    Season the beef with salt, black pepper, garlic powder, onion powder, paprika, and chili powder. Cook until mostly browned and no longer visibly raw, about 5–7 minutes.

    Add the diced onion and minced or bottled garlic to the mostly browned beef. Cook for 3–4 minutes, stirring occasionally, until the onion begins to soften and the garlic is fragrant.

    If the skillet contains a large amount of grease, carefully drain most of it, leaving approximately 1–2 tablespoons in the pan for flavor and for cooking the potatoes.

    Add the cubed potatoes to the skillet.

    Pour in ½ cup beef broth and add the Italian seasoning and Worcestershire sauce. Stir thoroughly so the potatoes are coated and the browned bits are incorporated.

    Cover the skillet, reduce the heat to medium-low, and cook for 12–18 minutes. Stir occasionally to prevent sticking, and continue until the potatoes are fork-tender. Add a small splash of additional broth if the skillet becomes too dry before the potatoes are cooked.

    Stir in the cooked brown rice. Cook uncovered over medium heat for 4–6 minutes, stirring as needed, until the rice absorbs the remaining broth and beef flavor.

    For crispy browned bits, let the mixture sit undisturbed for a minute or two at a time while it cooks, watching carefully so it does not burn.

    Taste the skillet and adjust the salt, black pepper, chili powder, or Worcestershire sauce as needed.

    If using shredded cheddar, sprinkle it over the top. Cover the skillet and cook for 1–2 minutes, until the cheese is melted. Serve hot, with hot sauce if desired.

Notes

Use cooked brown rice. Add broth gradually if needed while the potatoes cook. Nutrition estimates exclude optional toppings and will vary with the fat content of the ground beef.
