- 2 lb chicken breast (cut into 1-inch cubes)
- 2 tbsp olive oil (for coating the chicken)
- 2 tbsp lemon pepper seasoning (divided; use more or less to taste)
- 0.5 cup unsalted butter (1 stick)
- 0.25 cup honey
- 2 tbsp hot sauce (such as Frank's RedHot or similar)
- 1 tbsp lemon juice (freshly squeezed)
- 0.5 tsp red pepper flakes (optional, for extra heat)
- 1 tbsp fresh parsley (chopped, for garnish)

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill to medium-high heat (about 400°F / 204°C).

Place the cubed chicken breast in a large bowl. Add the olive oil and 1 tablespoon of lemon pepper seasoning. Toss thoroughly until every piece of chicken is evenly coated.

Thread the seasoned chicken pieces onto the skewers, leaving a small amount of space between pieces to ensure even cooking.

In a small saucepan over medium heat, melt the butter. Stir in the honey, hot sauce, lemon juice, the remaining 1 tablespoon of lemon pepper seasoning, and red pepper flakes if using. Whisk until well combined and slightly thickened, then remove from heat.

Place the skewers on the preheated grill. Grill for 10-12 minutes, turning every 3-4 minutes to ensure even browning and charring on all sides.

During the last 2-3 minutes of cooking, generously brush the hot honey lemon pepper glaze over the skewers. Continue to cook until the chicken reaches an internal temperature of 165°F (74°C).

Remove the skewers from the grill and let them rest for 2-3 minutes. Garnish with chopped fresh parsley and serve with any remaining glaze on the side.
Notes
For extra flavor, you can marinate the chicken in the oil and lemon pepper seasoning for 30 minutes before skewering. If you prefer a stickier glaze, simmer the sauce for a few extra minutes until it reduces slightly.
