Ingredients

  • 150 g Salted butter (softened)
  • 160 g Light brown sugar (soft brown sugar)
  • 1 tsp Vanilla extract
  • 0.5 tsp Almond extract
  • 1 Egg (beaten)
  • 225 g Wheat flour (Type 405 or plain flour; sifted)
  • 5 Large marshmallows (halved crosswise)
  • 10 Stück Chocolate (about 100 g total)
  • 20 Salted crackers (two crackers per cookie)

Steps

    Place the softened butter in a large bowl. Add the brown sugar and beat with an electric hand mixer until the mixture is light and fluffy.

    Add the vanilla extract, almond extract, and beaten egg to the butter mixture. Beat with the hand mixer until well combined and noticeably thickened.

    Sift the flour into the bowl and mix to form a smooth dough.

    Divide the dough into 10 pieces of approximately 55 g each and roll each piece into a ball. If necessary, lightly dampen your hands to prevent the dough from sticking.

    Gently flatten each dough ball between your palms. Place half a marshmallow and one piece of chocolate in the center.

    Pull the dough up around the filling and seal it completely so that neither the marshmallow nor the chocolate protrudes.

    Gently press one cracker into the bottom and another into the top of each filled dough ball.

    Chill the filled dough balls in the refrigerator for 1 hour so they firm up slightly before baking.

    Remove the dough balls from the refrigerator about 10 minutes before baking. Preheat the oven to 190 °C conventional heat, 170 °C fan, or gas mark 3.

    Line two large baking sheets with parchment paper.

    Arrange the dough balls on the baking sheets with plenty of space between them, ideally five per sheet, as they will spread during baking.

    Bake the cookies for about 15 minutes, until lightly golden brown.

    Remove the baking sheets from the oven and allow the cookies to cool briefly on the sheets before serving.

Notes

The cookies are especially soft and gooey inside immediately after briefly cooling. When shaping them, make sure the fillings are completely enclosed by dough so they do not leak out during baking.
