Ingredients

  • 7 bone-in, skin-on chicken thighs and drumsticks (6-8 pieces total)
  • 2 tsp dried oregano (for chicken)
  • 2 tsp paprika (for chicken)
  • 2 tsp garlic powder (for chicken)
  • 1.5 tsp dried thyme (for chicken)
  • 0.5 tsp ground cumin (for chicken)
  • 1.5 tsp chicken bouillon powder (1-2 tsp)
  • 1 lemon zest (zest of 1 lemon, for chicken)
  • salt (to taste, for chicken)
  • black pepper (to taste, for chicken)
  • 2.25 lb potatoes (cut into bite-sized cubes)
  • extra virgin olive oil (lots, for tossing potatoes)
  • 1 tsp dried oregano (for potatoes)
  • 1 tsp paprika (for potatoes)
  • 1 tsp garlic powder (for potatoes)
  • 1 lemon zest (zest of 1 lemon, for potatoes)
  • chili flakes (optional, to taste)
  • salt (to taste, for potatoes)
  • black pepper (to taste, for potatoes)
  • 1 cup chicken broth
  • 2 lemon juice (juice of 2 lemons)
  • 6.5 garlic cloves (5-8 cloves, minced or grated)
  • fresh dill (for serving)

Steps

    Preheat the oven to 400°F / 200°C.

    Add the cubed potatoes to a large baking dish.

    Toss the potatoes with a generous amount of extra virgin olive oil, 1 tsp dried oregano, 1 tsp paprika, chili flakes (if using), 1 tsp garlic powder, lemon zest, salt, and black pepper until well coated.

    In a separate bowl or directly on the chicken, season the chicken thighs and drumsticks with 2 tsp dried oregano, 2 tsp paprika, 2 tsp garlic powder, 1.5 tsp dried thyme, 0.5 tsp ground cumin, chicken bouillon powder, lemon zest, salt, and black pepper.

    Arrange the seasoned chicken pieces on top of the potatoes in the baking dish.

    Place the dish in the preheated oven and bake for 35–40 minutes.

    While the chicken is baking, whisk together the chicken broth, lemon juice, and minced garlic in a small bowl or measuring cup.

    Remove the baking dish from the oven and carefully pour the lemon garlic broth mixture around the potatoes (avoid pouring directly over the chicken skin to keep it crispy).

    Return the dish to the oven for another 25–35 minutes, or until the chicken is golden brown and cooked through (internal temperature of 165°F) and the potatoes are tender.

    Remove from the oven and spoon the flavorful pan juices over the chicken and potatoes.

    Garnish with plenty of fresh dill before serving.

Notes

For the best results, use a large enough baking dish so the chicken and potatoes aren't too crowded, which helps the chicken skin crisp up. If the chicken is browning too quickly, you can tent it loosely with foil.
