- 2 tbsp dijon mustard
- 1.5 tbsp oregano
- 1 tbsp paprika
- 2 tsp salt

- 2 tsp garlic powder
- 2 tbsp lemon zest
- 8 garlic cloves (smashed)
- 5 tbsp olive oil
- 0.5 cup parmesan cheese (grated)
- fresh parsley and dill (for garnish)
- 1.5 lb baby golden potatoes (halved)
- 0.25 cup butter
- 1 cup parmesan cheese (grated)
- 5 garlic cloves
- 2 tsp black pepper
- 2 garlic heads (roasted with 2 tbsp olive oil & 2 tsp salt)
- 2 tbsp olive oil (for roasting garlic)
- 2 tsp salt (for roasting garlic)
- 1 tbsp fresh dill (finely chopped)
- 0.3333333333333333 cup cucumber (grated)
- 1 cup plain greek yogurt
- 1 tsp salt
- 1 tbsp lemon juice
- 1 tbsp olive oil
Steps
- 1
Preheat your oven to 400°F (200°C). Prepare the garlic for roasting by cutting the tops off the two garlic heads, drizzling with 2 tablespoons of olive oil and 2 teaspoons of salt, wrapping in foil, and placing in the oven to roast until soft.
- 2
In a large bowl or directly on a large sheet pan, combine the chicken thighs and halved baby golden potatoes.
- 3
Add the lemon juice, dijon mustard, oregano, paprika, 2 teaspoons salt, 2 teaspoons black pepper, garlic powder, lemon zest, 8 smashed garlic cloves, 5 tablespoons olive oil, and 1/2 cup grated parmesan cheese to the chicken and potatoes. Toss thoroughly to ensure everything is evenly coated.
- 4
Arrange the chicken skin-side up and the potatoes in a single layer on the sheet pan. Roast in the preheated oven until the chicken is cooked through and the potatoes are tender and golden, approximately 35-45 minutes.
- 5
While the chicken roasts, prepare the Garlic Parmesan Butter by combining 1/4 cup butter, 1 cup grated parmesan, 5 minced garlic cloves, and 2 teaspoons black pepper in a small bowl.
- 6
Prepare the Roasted Garlic Tzatziki: Squeeze the roasted garlic cloves out of their skins and mash them. In a bowl, mix the mashed roasted garlic with the fresh dill, grated cucumber, Greek yogurt, 1 teaspoon salt, 1 tablespoon lemon juice, and 1 tablespoon olive oil.
- 7
During the last few minutes of roasting, dollop the Garlic Parmesan Butter over the chicken thighs and return to the oven until melted and bubbly.
- 8
Garnish the finished dish with fresh parsley and dill. Serve warm with the roasted garlic tzatziki on the side.
