Homemade Kebabs in Pita Bread with Salad and Yogurt Sauce
Ground beef kebabs seasoned with bell pepper, onion, garlic, smoked paprika, and cumin. They are quickly baked and served wrapped in pita bread or lavash with a fresh salad and a creamy yogurt and mayonnaise sauce.

Ingredients
- 500 g ground beef
- 0.5 pieza red bell pepper (finely chopped)
- 1 pieza white onion (finely chopped)
- 2 dientes fresh garlic (minced; use 1–2 cloves)
- 1 manojo cilantro or parsley (finely chopped, approximately 30 g)
- 1 tsp smoked paprika
- 1 tsp ground cumin (the original recipe specifies zira)
- 1 tsp granulated or dried garlic
- salt (to taste)
- black pepper (to taste)
- 1 tbsp vegetable oil (for brushing the kebabs)
- 4 piezas pita bread or lavash (one per serving)
- 2 piezas tomato (chopped for the salad)
- 0.5 pieza red onion (finely sliced)
- 100 g pickles (sliced)
- 0.5 manojo cilantro or parsley (chopped for the salad, approximately 15 g)
- salt (to taste for the salad)
- 2 tsp lemon juice
- 2 tbsp plain Greek yogurt (for the sauce)
- 2 tbsp mayonnaise (for the sauce)
- 1 diente fresh garlic (minced, for the sauce)

Preheat the air fryer to 200 °C. If using an oven, preheat it to 200 °C with convection.

Place the ground beef in a bowl. Add the red pepper, onion, garlic, cilantro or parsley, smoked paprika, cumin, dried garlic, salt, and pepper.

Mix until everything is combined. Knead the mixture and slap it against the bowl several times to compact it and improve its texture.

Spread the mixture over parchment paper and form an even square approximately 1.5–2 cm thick.

Cut the square into elongated portions to form the kebabs. Lightly brush them with oil.

Place the kebabs in the air fryer basket or on a baking tray. Cook at 200 °C for 15 minutes, until browned and fully cooked. In a convection oven, bake for approximately 20 minutes; the meat should reach 71 °C in the center.

While the kebabs are cooking, combine the tomato, red onion, pickles, and cilantro or parsley. Season with salt and add the lemon juice; mix gently.

To prepare the sauce, mix the Greek yogurt, mayonnaise, minced garlic, paprika, and salt until smooth.

Spread the sauce over each pita bread or lavash.

Place the hot kebabs on the bread, top with the salad, and roll or fold the bread to serve.
Notes
The recipe specifies 15 minutes in an air fryer at 200 °C or approximately 20 minutes in a convection oven. Adjust the cooking time according to the thickness of the kebabs and make sure the meat is fully cooked.
