Ingredients

  • 1 tbsp olive oil
  • 500 g beef cubes
  • 1 tsp salt
  • 0.25 tsp pepper
  • 0.5 tsp garlic powder
  • 2 tbsp all purpose flour
  • 3 garlic (cloves)
  • 1 onion (small)
  • 1 tbsp tomato paste
  • 0.5 cup red wine
  • 4.5 cup water (4-5 cups)
  • 1 beef broth cube
  • 1 tsp worcestershire sauce
  • 1 tsp thyme/rosemary
  • 2 bay leaves
  • 1 potato (large, sliced)
  • 1 carrot (sliced)
  • dried parsley (for garnish)

Steps

    In a bowl, season the beef cubes with 1 tsp salt, 1/4 tsp pepper, and 1/2 tsp garlic powder.

    Add 2 tbsp of all-purpose flour to the seasoned beef and toss until the cubes are evenly coated.

    Heat 1 tbsp of olive oil in a large pot or pressure cooker over medium-high heat.

    Add the beef cubes to the pot and sear until browned on all sides.

    Add the chopped onion and minced garlic to the pot and sauté until fragrant and softened.

    Stir in 1 tbsp of tomato paste and cook for 1-2 minutes to deepen the flavor.

    Pour in 1/2 cup of red wine to deglaze the pan, scraping up any browned bits from the bottom.

    Add 4-5 cups of water, the beef broth cube, 1 tsp worcestershire sauce, 1 tsp thyme or rosemary, and 2 bay leaves.

    If using a regular pot: Cover and simmer on low heat for at least 2 hours, or until the beef is tender.

    If using a pressure cooker: Seal and cook for 45 minutes to 1 hour.

    Add the sliced potato and carrot to the stew.

    Continue cooking until the vegetables are tender (about 15-20 minutes in a regular pot or a few minutes if using the pressure cooker's manual setting).

    Garnish with dried parsley before serving.

Notes

Cooking time varies significantly by method: use a regular pot for a slow 2-hour simmer or a pressure cooker for a faster 45-60 minute result. Pairs well with white rice or fried plantains.
