Ingredients
- 6 apples (Sliced)
- 0.75 cup brown sugar (For the apples)
- 1 tsp vanilla extract (For the apples)
- 2 tsp ground cinnamon (For the apples)
- 1 tbsp golden syrup (For the apples)
- 1 cup wheat flour (For the crumble)
- 1 cup oats (For the crumble)
- 0.667 cup brown sugar (For the crumble)
- 150 g butter (Must be very cold; for the crumble)
- 2 egg yolks (For the crème anglaise)
- 250 ml milk (For the crème anglaise)
- 0.25 cup sugar (For the crème anglaise)
- 1 tsp vanilla extract (For the crème anglaise)
Steps
- 1
Slice the apples.
- 2
Cook the apples over low heat with the brown sugar, vanilla, cinnamon, and golden syrup until softened. Set the apples aside.
- 3
Preheat the oven to 200 °C and prepare a 20 × 20 cm square baking dish.
- 4
Place the flour, oats, brown sugar, and very cold butter in a bowl.
- 5
Work the crumble ingredients together with your fingertips until you obtain an uneven, crumbly texture.
- 6
Spread the cooked apples in the square baking dish.
- 7
Distribute the crumble mixture over the apples.
- 8
Bake at 200 °C until the crumble is golden brown.
- 9
While the crumble is baking, whisk the egg yolks with the sugar to prepare the crème anglaise.
- 10
Heat the milk with the vanilla.
- 11
Gradually pour the hot milk into the egg yolks in a thin stream, whisking constantly to prevent the mixture from curdling.
- 12
Return the mixture to the saucepan and cook until just before it comes to a boil.
- 13
Cool the crème anglaise over an inverted bain-marie.
- 14
Serve the crumble warm and finish with a little crème anglaise.
Notes
The description specifies baking until golden brown without indicating an exact time. The butter must be very cold to create an uneven texture in the crumble. Add the milk to the egg yolks slowly while whisking constantly to prevent the crème anglaise from curdling.
