Creamy Passion Fruit Popsicles
These passion fruit popsicles are extremely creamy, easy to prepare, and perfect for enjoying at home or starting a dessert business.

Ingredients
- Passion Fruit (enough to yield 1 large cup of pulp; they should be heavy and somewhat wrinkled)
- Water (a little to blend the pulp)
- 1.5 L Heavy cream (high quality and very cold)
- 1 cup Condensed milk (large cup)
- 1 cup Passion fruit pulp (large cup, processed and strained)

Cut the passion fruits in half and scoop out all the pulp with a spoon.

Add the pulp to the blender with a little water and process thoroughly for approximately one and a half minutes.

Strain the blended mixture to separate the seeds and set aside the concentrated juice.

Pour the heavy cream (also very cold) into a bowl that must be cold and dry.

Whip the heavy cream at medium speed for 2 minutes.

Increase to maximum speed and whip for an additional 3 minutes until the cream stiffens and gains body.

Sweeten by adding the condensed milk to the whipped cream.

Incorporate the reserved passion fruit pulp into the mixture.

Whip again for approximately one minute until all ingredients are perfectly combined and the mixture looks smooth and creamy.

Pour the mixture into 9-ounce plastic cups.

Place the popsicle sticks in the center of each cup.

Place in the freezer for a minimum of 4 hours, or preferably overnight for optimal consistency.
Notes
To ensure the heavy cream whips correctly, both the bowl and the cream must be very cold. The recipe yields 18 units in 9-ounce cups.
