Ingredients

  • 2 cup cherry tomatoes (approx. 1-2 pints)
  • 12 oz chicken sausage (sliced into rounds)
  • 4 garlic cloves (whole or smashed)
  • 5.2 oz Boursin cheese (1-2 pucks (Garlic & Fine Herbs flavor recommended))
  • 2 tbsp olive oil (for drizzling)
  • salt (to taste)
  • black pepper (to taste)
  • 12 oz short pasta (such as penne or fusilli)
  • 3 cup baby spinach (fresh)
  • 0.5 cup pasta water (reserved from boiling)

Steps

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

In a large baking dish, combine the cherry tomatoes, sliced chicken sausage, and garlic cloves.

  3. 3

Place the Boursin cheese puck(s) in the center of the dish.

  4. 4

Drizzle everything with olive oil and season generously with salt and pepper.

  5. 5

Bake in the oven for 15-20 minutes (transcript mentions 10, but standard roasting takes longer) until the tomatoes are bursting and the sausage is caramelized.

  6. 6

While the vegetables bake, bring a large pot of salted water to a boil and cook the pasta until al dente.

  7. 7

Before draining the pasta, reserve about 1/2 cup of the starchy pasta water.

  8. 8

Remove the baking dish from the oven and stir the melted Boursin cheese into the roasted tomatoes and sausage to create a creamy sauce.

  9. 9

Add the cooked pasta and a splash of the reserved pasta water to the baking dish.

  10. 10

Add a large bunch of fresh spinach and toss everything together until the spinach is wilted and the pasta is well-coated.

Notes

The author suggests serving this with a side Caesar salad. You can use one or two pucks of Boursin depending on how creamy you want the sauce to be.
