Ingredients

  • 2 box Red Lobster Cheddar Bay Biscuit Mix (divided; one box for the bottom crust, one for the top)
  • 3 Lobster tails (meat removed and chopped)
  • 4 tbsp Butter (for poaching and sautéing)
  • 3 cup Chicken stock (divided)
  • 0.5 cup Carrots (diced)
  • 0.5 cup Onion (diced)
  • 0.25 cup Fennel (diced)
  • 2 clove Garlic (minced)
  • 1 tsp Old Bay seasoning (or to taste)
  • 0.25 cup All-purpose flour (to thicken the soup)
  • 1 cup Heavy cream
  • 2 tbsp Fresh parsley (chopped)

Steps

    Prepare one box of Red Lobster Cheddar Bay Biscuit mix according to package instructions. Spread the dough into the bottom of a deep-dish baking pan or skillet and bake until fully cooked to form the bottom crust.

    In a pan, lightly poach the lobster tail meat in a mixture of butter and a splash of chicken stock until just cooked through. Remove the lobster and set aside.

    In the same pan, add more butter if needed and sauté the diced carrots, onions, and fennel until softened.

    Add the minced garlic and Old Bay seasoning to the vegetables and cook for 1 minute until fragrant.

    Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes to create a roux and remove the raw flour taste.

    Slowly whisk in the remaining chicken stock and the heavy cream. Simmer until the mixture thickens into a creamy soup consistency.

    Stir the poached lobster meat and fresh parsley into the soup mixture.

    Pour the lobster soup mixture over the prepared bottom biscuit crust.

    Prepare the second box of Cheddar Bay Biscuit dough. Spread the raw dough evenly over the top of the lobster filling.

    Bake the pot pie in the oven (typically at 400°F/200°C as per biscuit box instructions) until the top biscuit crust is golden brown and fully cooked.

Notes

You can stop at step 7 if you prefer a simple lobster bisque/soup. The fennel adds a traditional seafood flavor profile that complements the lobster and Old Bay.
