Ingredients

  • 1 paquete instant ramen (including the seasoning and sauce packets)
  • 1 tbsp mayonnaise
  • 1 egg yolk
  • 1 tsp soy sauce
  • 0.5 cup noodle cooking water (reserved from cooking the noodles)
  • 1 egg (fried, for garnish)
  • 1 tsp chili oil (for garnish)
  • 1 tbsp scallions (chopped, for garnish)

Steps

  1. 1

Start by cooking the ramen noodles in boiling water according to the package instructions.

  2. 2

While the noodles are cooking, add the ramen sauce packet and seasoning to a bowl.

  3. 3

Add the mayonnaise, egg yolk, and a bit of soy sauce to the bowl with the seasoning.

  4. 4

Whisk the mixture well until completely combined and smooth.

  5. 5

Once the noodles are ready, pour some of the hot noodle cooking water into the bowl and mix to create a creamy broth.

  6. 6

Add the cooked noodles to the bowl with the broth.

  7. 7

Finish the dish by topping it with a fried egg, a drizzle of chili oil, and chopped scallions.

Notes

This technique is similar to the 'Kewpie Mayo Ramen' style that went viral for its creamy tonkotsu-like texture.
