Ingredients
- 1 tsp Cooking oil
- 7.5 cloves Garlic
- Fresh coriander (A handful)
- 60 g Salted butter
- 250 g Conchiglie pasta (90% boiled with salt)
- 0.5 tsp Crushed black pepper
- 2 tsp Crushed red chilli
- 0.25 tsp Himalayan pink salt (Or to taste)
- 1 tsp Onion powder
- 0.5 tbsp Chicken powder (Optional)
- 1.5 tbsp Parmesan cheese powder
- 0.5 cup Cherry tomatoes (Halved)
- 17 Fresh basil leaves
- 2.5 tbsp Pasta water or water (Add if required)
- 2.5 tbsp Cheddar cheese
Steps
- 1
Heat the cooking oil in a frying pan. Add the garlic and fry over a low flame until it is light golden.
- 2
Remove the fried garlic from the heat and let it cool.
- 3
Place the cooled fried garlic, fresh coriander, and salted butter in a grinding jug. Grind until a thick paste forms; this is the garlic butter.
- 4
Transfer the prepared garlic butter to a wok and let it melt over a low flame.
- 5
Add the 90%-boiled conchiglie pasta to the melted garlic butter and mix well.
- 6
Add the crushed black pepper, crushed red chilli, Himalayan pink salt, onion powder, and chicken powder if using. Mix well.
- 7
Add the Parmesan cheese powder, halved cherry tomatoes, and fresh basil leaves. Mix well to distribute the seasonings, cheese, tomatoes, and herbs throughout the pasta.
- 8
Add the pasta water or water if required, then add the cheddar cheese. Mix until the cheese melts.
- 9
Serve the pasta while hot.
Notes
The source does not specify the pasta-boiling time, the amount of salt used in the pasta water, or exact cooking times. Chicken powder is optional. Add the water only if needed to loosen the sauce.
