Cinnamon Apple Cake with Sweet Glaze

Ingredients
- 2 apples (peeled and diced)
- 45 g granulated sugar (for apple mix)
- 1 tsp cinnamon (for apple mix)
- 360 g plain flour
- 200 g granulated sugar (for cake batter)
- 4 tsp baking powder
- 300 ml whole milk (room temperature)
- 1 tsp vanilla extract
- 2 large eggs (lightly beaten, room temperature)
- 110 g unsalted butter (melted, for cake batter)
- 120 g unsalted butter (melted, for cinnamon swirl)
- 150 g light brown sugar
- 2 tbsp cinnamon (for cinnamon swirl)
- 200 g icing sugar
- 40 ml milk (for glaze)

Preheat your oven to 190°C (375°F) conventional or 170°C (340°F) fan. Grease and line an 8x10 inch baking pan.

In a small bowl, combine the diced apples, 45g granulated sugar, and 1 tsp cinnamon. Toss until the apples are evenly coated and set aside.

In a large mixing bowl, whisk together the 360g plain flour, 200g granulated sugar, and 4 tsp baking powder.

Add the 300ml room temperature milk, 1 tsp vanilla extract, 2 lightly beaten eggs, and 110g melted butter to the dry ingredients. Mix until just combined and smooth.

In a separate small bowl, prepare the cinnamon swirl by mixing 120g melted butter, 150g light brown sugar, and 2 tbsp cinnamon together until well combined.

Pour the cake batter into the prepared 8x10 inch pan and spread it out evenly.

Scatter the prepared apple mixture evenly over the top of the batter.

Drizzle the cinnamon swirl mixture over the apples and batter. Use a knife or skewer to gently swirl the cinnamon mixture into the cake.

Bake for 40 to 45 minutes, or until a toothpick inserted into the cake part comes out clean. Note that the cinnamon swirl and apples may look wet while hot.

While the cake is cooling, whisk together 200g icing sugar and 40ml milk until a smooth glaze forms.

Drizzle the glaze over the cooled cake before serving.
Notes
The cinnamon swirl and apples may still look wet and sticky while the cake is hot, but they will set as it cools. Ensure milk and eggs are at room temperature for the best batter consistency.
