Ingredients

  • Olive oil (for sautéing chicken)
  • 1 Chicken breast (cut into cubes and seasoned with garlic and onion powder)
  • 0.5 stick Butter (half a bar)
  • 3 Celery (stalks, chopped)
  • 1 cup Carrots (shredded (estimated quantity based on visual))
  • 0.5 Onion (chopped)
  • 4 clove Garlic (minced)
  • 0.25 cup All-purpose flour
  • 3 cup Chicken broth
  • 2 cup Fresh milk
  • 16 oz Heavy cream (one full carton)
  • Italian seasoning (to taste)
  • Garlic powder (to taste)
  • Onion powder (to taste)
  • Salt (to taste)
  • Black pepper (to taste)
  • 0.5 package Spinach (about 4-5 oz)
  • 16 oz Potato gnocchi (one full package)

Steps

    Heat olive oil in a large pot or Dutch oven over medium-high heat.

    Add the cubed chicken breast (previously seasoned with garlic and onion powder) to the pot. Cook until fully browned and cooked through.

    Remove the cooked chicken from the pot and set aside.

    In the same pot, melt half a bar of butter.

    Add the 3 chopped celery stalks, shredded carrots, half a chopped onion, and 4 minced garlic cloves. Sauté until the vegetables are tender.

    Stir in 1/4 cup of all-purpose flour and cook for about 1 minute to remove the raw flour taste.

    Slowly pour in 3 cups of chicken broth and 2 cups of fresh milk, stirring constantly to combine.

    Add the 16 oz carton of heavy cream.

    Season the broth with Italian seasoning, garlic powder, and onion powder. Stir well.

    Return the cooked chicken to the pot.

    Season with salt and pepper to taste.

    Add half a package of fresh spinach and the 16 oz package of gnocchi.

    Continue to cook until the gnocchi begin to float to the surface, which indicates they are cooked and the soup is ready to serve.

Notes

Serve warm with your favorite bread or garlic breadsticks. The soup thickens as it sits; if reheating, you may need to add a splash of milk or broth.
